Consider using SimplonAPI for Eiger unit tests

To do this, we would have to somehow reproduce what ADEiger does with the Simplon API. I think it would be better to contribute upstream to ADEiger to have a "simulated" mode using this.

For our purposes, ophyd-async mocking should be good enough. We only care that the files are written in the exact way we expect.

Can you start the ADEiger IOC pointing at the simplon API container? I have never tried it

Yeah I think that would be the use case - I think the ansto project aims to mimic the REST endpoints with fake signals - can probably use it as a spoof detector w/ ADEiger
